Training Restaurant

Catering students at Coleg Glan Hafren can now gain essential experience in the college's new Seren Training Restaurant, launched last year at the college's Trowbridge campus.

Coleg Glan Hafren has had a kitchen for catering students on-site for a number of years, but as the kitchen wasn't linked up to a service area, students were sent to Willows High School two to three times a week. To offer the complete training package to students, the college opted to refurbish the kitchen and convert the room next door into a serving restaurant, spending thousands of pounds on a new kitchen and a twenty-five seater restaurant.

Eric Couturier, the catering lecturer at the college, who was born in France and built up years of experience as a chef there, trains the students on the Introduction to Catering and Professional Cookery courses to deliver high quality food. The food is contemporary British cuisine, with a European influence.

The restaurant is now closed for the summer but when it re-opens it can be booked by members of the public and businesses, and there are also takeaway meals and coffee mornings available. Sample menu items include:

  • Smoked Haddock & Salmon Fish Pie finished with a Saffron Mash
  • Tagliatelle with Sun Dried Tomato, Pepper and Basil Sauce
  • Profiteroles with Chocolate Sauce
  • and freshly baked bread
